When cooking lobster, a lid that is almost airtight is needed to properly steam the lobster. Boiling is another suggestion for cooking lobster. A very large deep pot is needed for this. All types of lobster pots can be purchased at many local stores or even on-line.
Choices In Cooking Lobster
There are several ways to cook lobster and retain the flavor. The first and probably best known is steaming. Salt is an important ingredient when cooking this type of seafood. Make sure there is about one tablespoon of salt for every quart of water. Favorite herbs that can be added include garlic, bay leaf or peppercorn. In addition, adding an onion can add flavor to the cooking lobster.
There is some thought that lobsters can be hypnotized before being placed in a steamer or boiling water. Rub the lobster on the stomach gently to hypnotize it. Before doing that, be sure that the claws are tapped tightly shut, to avoid lobster accidents. Live lobsters can also be killed before cooking. Using a very sharp knife and holding the lobster down by its tail; place the knife about an inch from its eyes to its tail. Press the knife in and then down towards its eyes. This is possibly the most humane way to kill the lobster.
Cooking lobsters by boiling is a tried and true method. It is similar to steaming, in that spices and salt can be added to the water. Steaming takes a little less time than boiling. Cooking lobster through boiling takes about five minutes per pound.
